Cantillon beer is summed in a beautiful French phrase found in the brewery: 
“Le temps ne respecte pas ce qui se fait sans lui”. It roughly translates as “time does not respect what is done without it.” Drinking a Cantillon beer is often compared to consuming a liquid amusement park!
