There are typically 2 varieties of wheat beer, the Dutch “witbier” and the German “weissbier”. Witbier is based on the Belgian tradition of using ingredients such as coriander and orange peel to add variety to the flavours present in the beers. Weissbier on the other hand is based on the German tradition of mixing at least 50% wheat to the barley malt base to brew a light coloured top-fermenting beer.
